Waterleaf Launches New Summer Menu with Alfresco Dining

Waterleaf restaurant is pleased to introduce its new summer season brunch, lunch and dinner menus. Reflecting the restaurant's commitment to providing guests with an exceptional gastronomic and elegant experience, the new menu features carefully selected and artfully prepared offerings using locally-grown, seasonal ingredients. Coinciding with the new summer menu, Waterleaf's spacious outdoor patio is now open for alfresco dining, providing guests with a scenic waterfront view with picturesque landscaping and beautiful garden fountain.

This summer's brunch entrées include Buttermilk Fried Quail with tomato emulsion, bacon and hash browns, Caramelized Apple Pancakes; Crab Benedict with champagne sauce; Salmon with spiced mango broth and napa cabbage slaw; and Slow-Roasted Pork with pecan-smoked paprika sauce and fried eggs.

For lunch, the new menu includes appetizers such as Ratatouille and Smoked Salmon as well as lighter fare, including Seven Layer Salad; Chicken Fattoush with sumac vinaigrette; or Niçoise Salad with seared Ahi tuna, poached egg and potatoes. Lunch entrées include Beef Brisket Sandwich; Crispy Pork Loin Sandwich with arugula, pickled radish and giardiniera; Baked Rigatoni; and Roasted Vegetables with pita and hummus.

This summer's dinner entrées include seafood offerings such as Halibut served with chorizo and braised leeks; Salmon with spiced mango broth; and Seafood Matelôte. Additional menu items include Filet with peppercorn sauce; Porcini Crusted Veal Loin with mushroom sauce; Spice Rubbed Pork Tenderloin with white bean chili and chicharrones with maple-agave syrup; and Roasted Duck Breast stuffed with basil and fig.

Following the meal, guests can choose from a variety of sweet and refreshing desserts, including Chocolate Walnut Cake, Mango Brulée and Strawberry Frazier.

Waterleaf, led by General Manager Jean-Pierre Leroux and Executive Chef Nadia Tilkian, is located on the College of DuPage campus in the Culinary & Hospitality Center, 425 Fawell Blvd. in Glen Ellyn.
