Visiting Chef Series at Waterleaf Showcases Tony Priolo

More than 100 area business leaders enjoyed an evening of innovative cuisine prepared by Chef Priolo, the executive chef and owner of Piccolo Sogno in Chicago.

Chef Priolo was supported in the kitchen by Waterleaf Executive Chef Nadia Tilkian, Sous-Chef William Chamberlain, Restaurant Manager Aaron Heitmann, the Waterleaf team and students Tom Fitzgerald, Margaret Glenzinski, Ted Nagengast and Michael Walls. The meal included grilled octopus with tuna sauce and grilled frisee with roasted peppers and fingerling potatoes, ricotta and Swiss chard dumpling with pine nuts and prosciutto di Parma, lightly spicy seafood and tomato stew with garlic crostini, braised short ribs over greens and squash puree with soffrito and red wine, and half-frozen Marsala custard with amaretto cookies and chocolate chips.

This was Chef Priolo’s second appearance as part of the Visiting Chef series. He met with COD students and staff during an informal reception prior to the dinner. The evening at Waterleaf concluded with an announcement that a full-year scholarship in Chef Priolo’s name will again be awarded by the COD Foundation to a Culinary & Hospitality student.
