Students Explore Classical French Cuisine via Chef Paul Virant

College of DuPage Culinary student Valerie Mills of Bloomingdale observes guest Chef Paul Virant during a recent fine dining event at Waterleaf restaurant. Chef Virant, owner of the celebrated Vie in Western Springs and the recently-opened Perennial Virant in Chicago, prepared a menu with the help of students enrolled in the College's Classical French Cuisine Culinary Class.
